Meet Nina, the World's Best Pastry Chef
Nina Métayer, a highly acclaimed Parisian chef and pâtissière, has made a significant impact in the culinary world. She was named the World's Best Pastry Chef in both 2023 and 2024.
With experience working alongside renowned chefs in Michelin-starred restaurants, she has also had the honour of cooking for President Macron. Nina was instrumental in achieving the impossible - freezing alcohol at a high ABV. Nina and the Xin team spent over two years researching, developing, testing, tasting (lots of tasting!), until finally, we hit upon the perfect recipe.

Creating the world’s first strongly spirited frozen sorbet cocktails wasn’t easy.
It took over two years of research and hundreds of iterations to master the combination of stabilisers and technology needed to freeze alcohol at a higher ABV. The result is a true game-changer: a sorbet that delivers bar-quality cocktails in a softly frozen form, ready to enjoy whenever and however you choose.
